I really don’t understand why Gray was chosen as the color for the default text color, but regardless I would like to change it and have it as gray and not need to change it anytime I log in or drop a box in my Lucid document. I don’t want it just to set as a default for the session, I want it always this way.

I do not believe what you are trying to do is possible. The styles you found do not carry over between documents.
If you want to see this made available, please make a feature request following the instructions in this post.
Can we upvote others’ feature requests? I’ve been wanting this added for some time now. It would also be great if the text added inside shapes and on lines could be set to a default color as well, so those don’t need to be changed one at a time, every time you add one.
You can upvote others’ feature requests. You’ll see the list of features at https://community.lucid.co/ideas (the Product feedback tab). Topics in the list have an upvote button on the right side
and clicking into a topic will show an upvote button at the top.
I have not seen the persistent text color request come in yet, but you can search for it in case I’m mistaken.
