Thanks for posting in the community! I'm sorry you're having trouble correcting your default text style. These steps should reset the default style to center/center:

1. Center/center text in a process shape.


2. Right-click > select 'Set default style'.


3. Drag new process shape onto canvas. 

If that doesn't do the trick please let me know. A workaround is to use ctrl/command + a and change the text position should at least fix this for existing shapes.

Style a Shape

Select > Custom Style 

(Custom Style) Section to expand it and review details:

To change the default style of the shapes added to your diagram:

1. Click on the canvas to deselect objects.
2. Choose a custom styling element like Line Color or Fill Color from the Properties Bar under the menu.
   
    

   

   
    

Any new shapes added to the document will display this custom style.

To apply the same style of one shape to another right-click the shape with the styling you want to copy and select "copy style." Then select the shape to which you want to apply the styling right-click and select "paste style." 
 

CHANGE the DEFAULT STYLE FORMAT applied to shapes/ objects

1. Create a new shape/object or use a shape/ object with a style you wish to use as your DEFAULT style.
2. Select this shape/ object.
3. Go to the EDIT menu and select SET DEFAULT STYLE.

The next shape/object you select and drag onto the template/ created automatically will use this NEW default style. Useful for process flow shapes/ objects.

I've just hit this issue too.  I only wanted to change the default text alignment for sticky notes (I prefer left instead of centre alignment) so I selected what I wanted and right clicked the sticky and hit Set Default Style.  Now suddenly every shape I add is yellow with black text and no border!!  I had no idea it would apply the sticky's format to every shape and this is so not what I wanted.

It would be much better to have separate defaults for different object types.  I want centre aligned text for flow charts and left-aligned for stickies
