How do I set the default to have square corners again? I know how to change each individual item but this is tedious and should be set at the default level.

It sounds like you're familiar with how to work with Shape Options but I'm including the complete list of steps for others who may have this question as well.
To set a Default Shape Style:
- Select a shape.
- Click the Shape Options icon in the formatting toolbar.
- Set the Rounded option to 0 px.
- Right click the shape.
- Select Set Default Style.
Now when you pull a shape from the Shapes menu it will automatically have the square corners.
