The line jump option is greyed out no matter what I do or select.

Thank you for posting in the Lucid Community! So line jumps are a feature used when lines cross each other. It looks like you're on the right track however you need to have a setup that looks similar the screenshot here:
It's also worth noting that Lucidchart will do this process automatically for you if turned on. To do this open your document's page settings by choosing File > Page Settings. Under the Line Settings section simply toggle on "Show line jumps." This will ensure that any overlapping lines cross with a jump!
