I’m trying to add an additional container, but every time I try, the app just takes me to the name of the last added container as if it wants me to rename (reuse?) it? Is there a limit of how many containers one can add?

Ideally - there is no limit on the number of containers you can have in Lucidchart
After typing the name for your new container, simply click on the canvas or another element in your diagram instead of pressing Enter.
This should confirm the name and create the new container.
