I can type freely in a shape but I want to add essentially an inline image / icon OR be able to type in an icon font. Is there a way to do either 1) paste images in text inline inside a shape or 2) use an icon font to get what I'm after?

Thanks for posting on the community! Unfortunately pasting an image in-text is not currently supported in Lucidchart. However this is an excellent idea! Would you mind adding your idea to our feature request form?
Lucidchart does not have an icon font but it has the capability to import fonts into your document. If you have a specific font you would like to use take a look at our Work With Text article to learn how to import fonts.
