Trying to remove the contact icon and add other icons. Unable to find an icon bar

Thanks for reaching out on Lucidchart Community!
If I'm understanding you correctly you're looking to remove the user image. To edit your org chart double click on it. Note that single clicking will not give you the org chart sidebar that you are looking for. Double clicking opens the right hand panel that will allow you to change the shape options for the members of the org chart including removing the profile picture.
See the gif below noting the first time I click was a single click and the second was a double click giving me access to that panel.
