I'm looking to reference specific pivot tables within Google Sheets and therefore when I update base data and the pivot changes that there is an opportunity to dynamically change the table on the diagram. Is this possible?

You can import data from Google Sheets into Lucidchart and then link cells/rows/columns of that data to any shape in your diagram. Working with Google sheets also has the benefit of being able to see live updates from your data. This means that Lucidchart automatically pulls updates made to your spreadsheet and updates the imported data and linked shapes.
