I see that you can still view documents after you cancel a paid account but can you still export them to the variety of file types? It also says that you will not be able to edit your documents with full functionality--what capabilities can I expect?

Please refer to our Lucidchart Plans article for a breakdown of the features and functionality available at each subscription level.
To answer your specific questions: On a free account you have access to all export options except for Visio export (which is a premium feature) please refer to our Export/Download your Lucidchart documents article for details on how to export. On a free account you are limited to three editable documents (the 3 most recently created documents) and each of those 3 editable documents is limited to 60 objects.
