I deleted some users (ex employees) but don't know where can I look to see the list of deleted users.

Unfortunately the site does not have a native way to generate a list of recently deleted users. If you need help locating those deleted users or locating their documents then please submit a support ticket so we can take a closer look.
There are many other great features available regarding user management. I have listed a Help Center article below that you may find helpful in the near future.
