The alternative shape defaults to being split exactly in 2.
It doesn't seem to be possible to have one half of the shape smaller that the other.
It also doesn't seem to be possible to have more that 2 options unless I'm missing something.

You're right it's not possible to have one half of the default alternative shape a smaller shape. I can also confirm that there are the two options in the template the Option Loop and the Alternative. I’ve gone ahead and moved your post to our product feedback community space. Ideas shared here are reviewed by the product development team for their consideration.
One thing I want to suggest is that you can adjust the space allocated to each side by clicking and dragging the gray square on the dotted line. You could also place two Option Loop shapes side by side and adjust the size of the second. Although I'm unsure how viable these options are for you depending on what you need to accomplish.
